One of my dearest friends has the most amazingly talented cake decorator for a sister.  I love going to her daughter’s birthday parties just to see what kind of wonderful creation her sister {Erin} will make for the occasion.  My favorite thing about Erin is that she does these amazing and over-the-top cakes with no formal training–just because she loves to bake and decorate!  I asked Erin a couple of weeks ago at the most recent birthday party if she would be interested in putting together a little St. Patrick’s Day dessert and this is what she came up with….  a cupcake recipe courtesy of Brown Eyed Baker and just look at her creativity in decorating them!!  She put two separate piping bags with different colored frosting in each and then put them together in a larger piping bag– GENIUS!!
