My Favorite Cookies {Crunchy Chewy Cereal & Coconut Cookies}
My grandmother used to make these cookies and send them to me in a care package while I was in college. To this day, I've never had a more delicious cookie....close, but not quite.
Its been a few years since I finished college, but I still remember these cookies. I was home a few weeks ago and asked Granny if we could find the recipe, she agreed and we ended up spending countless hours going through just about every single one of her cookbooks with not the slightest bit of luck. Just when we were about to give up and settle on a Ranger cookie recipe that sounded a lot like what I was describing, we found this:
Aha! There it was tucked inside one of her little recipe boxes....not to be confused with any other recipe out there: My Favorite Cookies.
Similar to a ranger cookie in that it uses cornflakes, pecans and coconut, it doesn't have any oatmeal or chocolate which makes the texture different. Its a little bit crispy and a little bit chewy--cookie texture perfection in my book. The taste kind of reminds me of a macadamia nut cookie, only better. Way better.
I took these to my son's school last week to serve to the new parents that were dropping their 4-year-olds off for their first day of Pre-Kindergarten. I got three requests for the recipe in an hour and one gentleman hovered over them, taking down at least five before he went on his merry way. I think they may have help distract him from any anxiety he was harboring over turning his precious little angel over to the rigid Catholic school system.

Ingredients:
1 cup unsalted butter, room temperature
3/4 cup brown sugar
3/4 cup sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup crushed cornflakes
1 cup chopped pecans, toaste
1 cup coconut
Directions:
Preheat oven to Convection Bake setting at 350 degrees. Line two cookie sheets with parchment paper and set aside.
Cream butter and sugar together for about 2 minutes, until light and fluffy. Add the eggs and vanilla and continue mixing for another minute.
{Should you have a darling little helper, have her} add in the flour, baking soda and baking powder. Mix again, until dry ingredients are completely combined.
Add toasted pecans, corn flakes and coconut mixing on low speed until just incorporated.
Drop cookie dough by the tablespoon full onto cookie sheets leaving about 2 inches between each cookie so they don't run together.
Bake cookies for about 15-17 minutes, until golden brown. [I know the directions above say only 10-12 minutes, but I'm guessing that because I used butter in place of the shortening, the cooktime was longer.]
These really are the best cookies ever! They are like one my Grandmother used to make as well!
