Cucumber & Orange Salad
My CSA basket has been full of cucumbers and oranges for the last several weeks and they really seem to be piling up around my kitchen. I was complaining about them to my babysitter the other day and she said her mom used to make a delicious salad with cucumbers and oranges.... talk about timing, I tell ya! Simply chop up some cucumbers and oranges, slice some red onion and drizzle on a little rice vinaigrette.
This beautiful salad is absolutely perfect for a light lunch especially during these long hot days of summer. The red onions add such a lovely bite and the sweetness of the oranges, the coolness of the cucumbers and the tang of the rice vinegar make this salad unbelievably delicious! For a little added kick I tossed in a pinch of red pepper flakes and a sprinkling of freshly ground black pepper.
MmmmMmmmmmm so refreshing and satisfying. It's also great if you're watching your waistline, for any of you that happen to be watching yours {I watch mine get bigger and bigger every day....maybe this salad will help turn things around}.
Ingredients:
2 cucumbers
2 oranges
1/2 small red onion
3 tablespoons seasoned rice vinegar {or rice wine vinegar, seasoned or unseasoned}
1 tablespoon grapeseed oil
pinch of crushed red pepper
freshly ground black pepper
Directions:
Peel cucumbers, slice down the middle and scrape out the seeds. Cut cucumbers into bite-sized chunks and put into a large bowl. Peel oranges, removing any seeds and membranes and slice into bite-sized chunks. Add oranges to cucumbers.
Slice red onion thinly on a mandoline. Add to oranges and cucumbers.
In a small bowl, mix together rice vinegar, oil and crushed red pepper.
Drizzle over vegetables and toss well to combine. Refrigerate salad for at least 30 minutes. Before serving, sprinkle with freshly ground black pepper. Enjoy!
In case you were wondering, yes it is hearty enough to feed a hungry man after a three hour surf session.
