I don't know what's been keeping me from sharing this recipe before now. This is probably the best little concoction I've ever created. It is not only the most insanely delicious combination of flavors, but it is incredibly easy to make and is by far my "most requested" recipe.
Anytime I ask "What can I bring?" the answer is always "That tomato onion dip stuff". I love to see the look on peoples face when they take a bite of a crisp toast smeared with a soft cheese {burrata, goat cheese, fresh ricotta} and topped with this naturally sweet and savory tomato onion jam. It's always the same question "What's IN that?" and when I say "its just tomatoes, an onion, olive oil, salt and pepper" they don't believe me. How can such a few simple ingredients make something soooo magnificent? The way the juices of the tomatoes cook together with the onion and begin to brown and and release their natural sugars is uh-mazing!
This is the perfect time of year to serve this dish with all of the beautiful tomatoes ripening. This "jam" is an amazing accompaniment to grilled steak or roasted chicken too. I used large, ripe tomatoes for the batch below, but you can easily substitute whole grape or cherry tomatoes.

Hmmm… Low carb substitute for the bread? It soo good but trying to stay away from flour and sugar any suggestions?
Its awesome alongside a piece of grilled chicken or a steak. You could also serve it over some spaghetti squash or other steamed vegetable to jazz them up.
