When I go back home to Texas, usually my first stop before I pull into my grandmother's driveway is a quick drive through Whataburger so I can pick up a breakfast taquito. It is one of my favorite foods in the whole world. The eggs are soft, the crumbled sausage adds a perfect salty bite and topped with creamy cheese and spicy picante sauce its breakfast perfection!
I know other food joints have little breakfast tacos--but they try too hard by adding in onion and peppers that turn to mush and end up ruining the end product. Since there are no Whataburgers in Southern California, if I want a good breakfast taco, I've got to cook them myself.
This is my take on my all-time favorite breakfast, so incredibly delicious that I may or may not have almost made my in-laws miss their flight by forcing them to stop on our way to the airport after our wedding reception. It wouldn't be the last time I ticked them off, but I must admit it was definitely worth it that time.
