Breakfast Tacos {aka Whataburger’s Sausage Egg & Cheese Taquitos}

When I go back home to Texas, usually my first stop before I pull into my grandmother's driveway is a quick drive through Whataburger so I can pick up a breakfast taquito.  It is one of my favorite foods in the whole world.  The eggs are soft, the crumbled sausage adds a perfect salty bite and topped with creamy cheese and spicy picante sauce its breakfast perfection!

I know other food joints have little breakfast tacos--but they try too hard by adding in onion and peppers that turn to mush and end up ruining the end product.  Since there are no Whataburgers in Southern California, if I want a good breakfast taco, I've got to cook them myself.

This is my take on my all-time favorite breakfast, so incredibly delicious that I may or may not have almost made my in-laws miss their flight by forcing them to stop on our way to the airport after our wedding reception.  It wouldn't be the last time I ticked them off, but I must admit it was definitely worth it that time.

 

Ingredients:

1/2 lb breakfast sausage [I like Jimmy Dean]
6 eggs
1/4 cup half and half
1 tablespoon butter
1/2 cup shredded Mexican blend cheese
1 small avocado, cut into chunks
4  flour tortillas
picante sauce, salsa, hot sauce .... whatever you want to call it... just be sure its got tomatoes, onions and peppers in some form

Directions:

In a large non-stick skillet over medium-high heat, add sausage.  Using the back of a wooden spoon, crumble and stir the sausage until it is browned.

In a medium bowl, add eggs and whisk in the half and half.

When sausage is done, transfer to a paper towel lined plate so that the excess oil drains out of the sausage.

Wipe out excess oil and return skillet to heat, lowering the heat to medium-low.  Add one tablespoon of butter and coat the bottom of the skillet.

When butter is melted, add egg mixture.  Gently cook eggs, by slowly gliding a spatula under and around the eggs.  Too much stirring will break up the eggs and they won't stay creamy.  When eggs are 90% done, add in the crumbled sausage and cheese, cooking for another few seconds.

Turn off heat and stir in avocado chunks.

Warm tortillas on a skillet or griddle set over high heat, adding a little extra browning to both sides...about 20-30 seconds per side.

Pile tortillas with sausage-egg mixture and drizzle on your favorite salsa.
