Smoked Trout Dip


8-10 oz smoked trout, skin and fat scraped off
1/2 cup mayonnaise
1/2 cup cream cheese, softened
1/2 cup sour cream
juice of one lemon
salt and pepper
chopped fresh chives for garnish {if desired}


In a food processor, pulse mayonnaise, cream cheese, sour cream and lemon juice until combined.  Break up trout into chunks and add to food processor, pulsing until fish is combined and only a few small chunks remain.  Season with a dash of salt and pepper and transfer into your favorite serving bowl.  Sprinkle with chives, if using, and serve with your favorite dippers.  Just plain old saltines are wonderful as well as slices of freshly toasted ciabatta.  If you can't find smoked trout, look for smoked albacore or salmon and use in place of the trout.
