Zuchinni Apple Doughnuts

Kids love doughnuts, its a simple fact.  My kids get doughnuts with their dad every Saturday morning...but never, no never with their mother...until NOW!   I found these cool little doughnut pans the other day and of course, couldn't help but try to figure out a way to "pull one over" on my kids.   These were quick and easy to put together for breakfast and while the kids didn't eat them quite as fast as daddy's doughnuts, they still enjoyed them and I felt good about serving them.

Ingredients:

Doughuts:
1 1/2 cups baking mix
2 eggs
1/3 cup sugar
1/2 cup applesauce
1 banana, mashed
3/4 cup shredded zuchinni
1 teaspoon cinnamon {or nutmeg}
2 tablespoons ground flax seed

Frosting:
4 tablespoons cream cheese, softened
2 teaspoons honey or agave syrup

Directions:

Preheat oven to 325 degrees on Convection Bake setting.  In a medium-size mixing  bowl, mix first 8 ingredients together.  Coat doughnut pan with cooking spray and pour mixture into doughnut molds until they are just filled.  Bake for about 16 minutes {14 minutes if you are using the mini-doughnut pan}.

In a small bowl, mix cream cheese and honey together until well-incorporated.

Dip each doughnut into "frosting" and serve!

I found my doughnut pans at Sur La Table, but have also seen them at the big-box craft stores as well.   If you can't find them, this recipe would still be great if you just wanted to serve them as muffins for breakfast or a healthy snack.
