Peaches are in abundance everywhere right now...its the height of the season for them and I just had to come up with another way to use them than in cobbler, crisp or ice cream form...my jeans are too tight and I promised myself I was going to lose 8 lbs by the end of August {so I could look good in a swimsuit by summer's end}. Now my deadline has been pushed back to September {so I can look good for all the other mom's at my son's new school he's starting this fall}...and this fresh and healthy salsa is going to help me reach my goal!
Peach Salsa
Ingredients:
3 medium peaches, chopped
1 red bell pepper, diced
2 green onions, sliced
1/4 cup minced cilantro
1 tablespoon red onion, diced
2 garlic cloves, minced
1 1/2 tablespoons lime juice
1 small jalepeno, seeds removed and diced
1/2 teaspoon salt
Directions:
To easily remove skins from peaches, drop them into boiling water for 30 seconds-1 minute. Remove from boiling water and place into a bowl of cool water to stop them from getting too soft. Remove pits and chop. In a large bowl toss peaches with remaining ingredients, except for the salt.
Cover and refrigerate for a couple of hours to let the flavors come together. Sprinkle with salt just before serving.
I served this salsa over grilled fish seasoned with cajun spices. You could also use it over grilled or roasted chicken breasts. It's so packed full of flavor that even hubby [who doesn't like to mix his fruit with his "main course"] loved it!
This recipe is simple yet very tasty and adds great flavor to the dishes you recommend. I make fish tacos with fresh caught local fish like Crappie and BlueGill and this salsa adds a nice change in flavor compared to regular savory salsas or topppings. Thank You!!
