Tortilla Soup

Perfect for a night you don't feel like spending hours in the kitchen.  Perfect if you want to prepare something to take to work for weekday lunches.  The perfect accompaniment to "taco night".   It's perfect anytime  AND its the easiest tortilla soup recipe you'll find.  Your family will think you spent hours preparing it!

Ingredients:

4 cups organic vegetable, chicken or beef broth
1 can Ro-tel tomatoes
1 package taco seasoning
1 can organic refried beans--black or pinto
Tortilla chips
Shredded cheese (Cheddar, Mexican Blend, Cotija)

Optional garnishes:
Avocado
Chopped green onions
Chopped fresh cilantro

Directions:

In a medium saucepan over medium-high heat, stir together first 4 ingredients.  Bring mixture to a boil and reduce heat to medium low, stirring occasionally for 10 minutes.  Remove from heat and serve with crushed tortilla chips and cheese.

Garnish with avocado, green onions and cilantro, if desired.

**If you want to make this soup as a main course for dinner, add in a handful of shredded rotisserie chicken.
Easy. Breezy. Delicious.

  1. I remember this recipe!!!! One of my faves. Gonna have to try that one again soon. I loved how the beans made it a little more hearty and gave lots of protein. But I do also love it with chicken.
