When it comes to my meals, I'm always on the quest for something new. Very rarely do I make the same dish the exact same way I did the time before. Even if I really love something I'm still always tweaking, adding and adjusting. This meal is the exception. It's not only a standard in our weekly dinner rotation, but I entertain with it often because it is so fabulous and so easy and always gets rave reviews.
Don't get turned off when you see the ingredients...just TRUST me that the flavor combination is insanely delicious and I can pretty much guarantee you'll make it more than once! I usually use the sauce on pork tenderloin, but these pork country ribs were calling my name today; and I'm pretty sure the sauce would taste great on chicken, shrimp, shoe leather..... so get cookin'!
1/2 cup orange juice
1/2 cup ketchup
1 teaspoon cumin
1/4 cup chopped fresh cilantro
1 tablespoon Asian chili garlic sauce
1-2 lbs pork country ribs, the leaner the better
salt and pepper
Pulse first five ingredients in a food processor until cilantro is broken up. Salt and pepper all sides of pork and place in a ziplocking bag with half of marinade. Let pork marinate at room temperature for about 30 minutes.
Heat grill to medium-high heat and cook ribs for about 3-4 minutes per side, pouring any remaining sauce from the ziplocking bag over the meat. Ribs are ready when an instant read thermometer reads 155-160 degrees. I like a tinge of pink in my pork, some people like it cooked well done.
While the meat is cooking, pour remaining sauce into a small saucepan and cook over medium-low heat for about 5 minutes, stirring occasionally. Pour sauce over country ribs and serve with a side of jasmine (or regular) white rice. The sauce is fantastic as it seeps into the rice and will most definitely cause you to go back for more!! MMMMMmmmmmm.
