Usually when I'm trying to sneak some good (healthy) things into meals for my kids, I rarely partake. I chalk that up to my palate being far more sophisticated than theirs, but this time I scorfed down two whole waffles...that would be EIGHT triangles! And my daughter, who will usually only eat 3/4 of her waffle also had two whole waffles! These are fabulous and didn't need a lick of butter or syrup!
1 small yam
1/2 large banana or 1 small
1 cup flour
1/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon cinnamon
1 cup milk
1/4 vegetable oil (or melted butter)
1 teaspoon vanilla
2-3 tablespoons ground flax seed (optional)
In a medium bowl, combine flour, sugar, baking powder and cinnamon. Make a well in the middle and set aside. In another bowl, whisk together egg, milk, oil and vanilla. Add liquid ingredients to dry ingredients until just incorporated. Add pureed yam and banana and flax seed, if using. Be careful not to overmix, batter will be slightly lumpy. Cook on your waffle iron according to manufacturer's instructions.
