English Pea & Avocado Dip

Remember the English peas (in light of the recent celebrations in UK, I feel it is my obligation to capitalize the "E" in English here, though I do not know if it is proper) my 4 year-old helped me shuck for our leftover ham and pea risotto?  Well, I was hoping that because he helped me in making dinner that I might possibly get him to eat the peas if I served them in a pretty little orange dish on his dinner plate.  Didn't happen.  So I had to hide them.  This dip tastes JUST like guacamole, only its got the peas and greek yogurt, adding lots of good protein.  I served it with kale chips instead of tortilla chips and the kids gobbled it up!

Ingredients:

1 small ripe avocado
1/3 cup steamed English peas
2 tablespoons plain greek yogurt, regular or 2%
1/8 teaspoon garlic powder
salt, if desired

Directions:

Combine all ingredients in a food processor until mixture is smooth and creamy.  Serve with kale chips, or any other veggie chips you can find.  Your kids will love it (and so will you)!
